Healthy Chicken Recipes: Chicken with Red Peppers

This healthy recipe of chicken with peppers and cherry tomatoes is a great tasting and satisfying meal. It can be serve for any family lunch or dinner as the main entrees.

The pepper fruits can be round or oblong and come in different colors of red, yellow, orange, purple and green. The plant originated in South America than brought to Europe and the rest of the world.

Did you knew that the peppers were first used as a medicinal plant? Red Pepper contain Capsaicin, the  same chemical we used in remedies that provide relief for sore and strained muscles. and it also known to improve digestion and increase blood circulation.

Ingredients for 6 servings:

12 chicken Legs

2 peppers cut into strips

1 handful of cherry tomatoes

1 onion sliced into rings

2  tablespoons olive oil

4 teaspoons paprika

1 teaspoon turmeric

1 1/4 teaspoon salt

4 tablespoons chopped chives

Direction:

  • heat the oven to 220 and prepare the baking dish with parchment paper
  • In a small bowl mix well the olive oil, paprika, turmeric and the salt.
  • Place everything in the baking dish
  • Mix well and roast everything in the oven for about 40 minutes, until the chicken is done.
  • Decorate with the chopped chives and served

Ingredients (4 serving size)

Two slices of big Salmon

Small rice paper wrappers

1 medium size grated carrot

1/4 Small turnip

1 Scallions

1/4 teaspoon grated ginger

1/2 teaspoon soya

Sesame oil

Few cabbage leaves for steaming

Teriyaki Sauce:

1/4 cup soya

1/4 cup sake

1 teaspoon mirin

1 teaspoon grated ginger

3 teaspoon honey

Directions:

1. Grate the carrot and the ginger, finely chop the turnip and the Scallions. put everything on the side.

2. Cut the Salmon meat into small cubes and season with 1/2 teaspoon soya and a bit of sesame oil.

3. Dip the rice paper wrappers into a bowel of warm water for one minute. After soaking the rice sheets should become very flexible and smooth and easy to work with.

4. In the center of each rice paper put a bit of the salmon and the vegetable, Fold the top over the filling and the bottom on the cover, to roll (like blintzes). Roll the right end in on direction and the left end in different direction (like a candy wrapper) than take the 2 ends and tie them together.

5. Line the bottom of the bamboo steamer with cabbage leaves and arrange the dumplings inside.

6. Put the bamboo steamer above boiling water and steam for 7 minutes.

7. Mix all the teriyaki sauce ingredients until you get smooth texture.

8. Serve the dumplings with the teriyaki sauce on the side ready for dipping.

For lunch don’t get to crazy it is the middle of the day and if your meal will be too big you will feel stuff and heavy for the rest of the day.

In the evening make yourself some thing small and healthy like one bowel of vegetable soup or maybe porridge oatmeal.

Healthy Chicken Recipes: Broiled Chicken with Lemon

As part of my endless search after the best healthy recipes I found out that healthy chicken recipes are very easy and common and I can add my own twist to most of them.

Just the other day I was looking for an healthy chicken recipes to make something special  for our traditional family friday night dinner. Every friday my whole big fat family are meeting together at my mom house and every body bring his own dish to the feast. So this time I was in charge of the chicken and after a long search of boring fried chicken recipes, I finally found this Broiled Chicken with Lemon recipe.

Chicken is a great source of protein and lemon is full with vitamin C, so my dish was a good source of protein without too much oil or fat, plus everybody loved it. I found it in an Israeli website and I thought I must share it with you guys

So for the ingredients:

1 small chicken

1 teaspoon salt

1 garlic clove

1 teaspoon sweet paprika

1/4 cup fresh lemon juice

1/4 cup water

1/4 teaspoons oregano

1/4 teaspoons lemon zest

And for the directions:

1. Clean the chicken. cut out the wings, the windpipe and remove the all internal parts.

2. Season the chicken. Rub the salt and the garlic inside the chicken skin and than sprinkle the paprika.

3. Spread the chicken on a baking dish with the chicken skin toward the bottom.

4. In a separate bowl you mix together the oregano, lemon zest, The water and the lemon juice and pour everything on the chicken.

5. bake in the oven in 401˚F. No need to cover the chicken in the stove.

Bake for 40 minutes and than turn the chicken upside down and keep baking for another 35 minutes. During baking pour the liquid from the bottom of the dish on the chicken and repeat this action few times.

Big, beautiful, fresh and colorful salad. Today’s post is part of my series healthy lunch ideas for anyone who like to eat and feel good after that.

Salad is always an healthy choice as long as you remember to use only healthy ingredients in the right proportions (if you use too much croutons, too much nuts and too much mayo dressing – it’s just not that healthy anymore – sorry guys…).

One more thing about healthy and ingredients, remember that more fresh mean more healthy! Some of those vitamins just like fresh! less fresh = less vitamins…

So if you are working in an office or in any other work place that have a little kitchen area my recommendation is to bring all your favorite veggie with you and chop them right before lunch.

It’s only take about 5 minutes and your salad will be so much more fresh, healthy and of course tasty than those pre-made, plastic container salads that are usually served in the local restaurants.

So, back to our healthy lunch ideas: And for today, the recipe of my favorite lettuce salad:

The ingredients:

1 Small lettuce

1 green onion

1 tomato

1 small, thin and yummy cucumber (believe me those are the best ones, once you will try those you will never go back to those hugh cucumbers)

small handful of pine nuts.

1 cocked beet

some cauliflowers (not the all flower just brake a few small flowers)

Directions:

For the dressing:

I like to make my own easy to make fresh dressing, but you can use any dressing you like. Please remember that some of those pre made dressing that you can buy, are not the most healthy choice and also those dressing are often too rich and heavy and they will not compliment this salad.

So the ingredients for my very simple and yummy dressing are :

fresh lemon juice

olive oil

and salt

Directions for the dressing:

squeeze the lemon, sprinkle the olive oil, spread the salt, mix everything and Voilà!

 

For the meat lovers that just can’t call it a lunch unless they eating some meat you can add a grilled chicken, or even better a grilled fish.

or if you are a veggie, you can add a broiled egg for some proteins.
